
Owner and head chef behind one of Brisbane's most ambitious French kitchens, and more recently a taqueria. A New Zealander who took the reins of Woolloongabba's C'est Bon in 2020, he has grown the French institution into a micro-precinct spanning Le Bon Bar, Ooh La La Rooftop, The Cellar and La Terrasse, cooking modern French with unexpected twists and a deep bias toward Queensland produce. In 2025 he added Birria Boy, a woodfired Jalisco-inspired taqueria at Clarence Corner that outgrew its pop-up brief within months.
